Healthy Chicken Salad

No Mayonnaise Needed.

Servings: 4-6 servings

Total time: 15 minutes


2 cups of shredded chicken

1/2 cup of chopped celery

1/2 cup of halved grapes

1/4 cup of chopped red onion

1 tablespoon of finely chopped parsley

1/2 tablespoon of Dijon mustard

2 tablespoons of shredded almonds

1/4 cup of plain Greek yogurt

Salt & Pepper to taste


  1. Shred the chicken by hand or with a food processor. I recommend using rotisserie chicken from your local grocery store to save time.

  2. Chop celery and red onion into small pieces, halve the grapes and finely chop the parsley. If you did not buy pre-shredded almonds, doing that with a food processor works well.

  3. Combine all the ingredients in a bowl. Stir until well mixed.

  4. Store in the fridge for 3 to 5 days.
